For dinner tonight, I did what I've thought of doing a number of times, but kept not following through on: I made a lasagna with a peanut sauce, inspired by Thai dishes I've eaten. It didn't work out quite the same as other lasagnas I've done, as I usually depend on the liquid in the sauce to cook the noodles while the lasagna bakes, but the amount of the sauce and the nature of it meant that there wasn't enough; however, pouring a little water in the sauce that collected around the edge and putting some foil over it part way through baking seemed to solve the problem just fine.
I don't have measurements for much of anything I put in, as I wasn't working from a recipe, and was making it up as I went along.
Sauce:
- the white part of a bunch of green onions, sliced
- a couple inches of the stems from a bunch of cilantro, chopped (cilantro leaves should work ok, too, but Mark had used some, and I wanted to save some for something else)
Saute the green onions and cilantro stems in a little bit of peanut oil in a small pan. Add:
- soy sauce
- a splash of rice vinegar
- dried basil and lemongrass, depending on preferences
Add enough of the liquid to cover the bottom of the pan, but not quite enough to cover the onions and cilantro. Simmer for a couple minutes. Add:
- natural peanut butter
I added the last of the peanut butter we had. I think it was more than a half cup, but less than a cup. Stir the peanut and soy sauce mixture as the peanut butter melts. Add skim milk to thin out the peanut-soy-seasoning taste and make a nice pourable sauce. I probably would have used some coconut milk if we had it, diluted with skim milk.
Cheese:
I mixed about 2/3 of a large container of cottage cheese with two eggs, and sprinkled in some dried lemongrass and dried galangal. Ginger probably would have worked just fine.
Veggies:
I used shredded carrot, about 2/3 of a bag of "broccoli slaw", and a bag of pea pods (sliced to make more bite-sized pieces). I'd probably go a little easier on the broccoli slaw if I were to do it again; the final result was tasty, but I think the veggie to cheese and sauce ratio was a little high.
I was trying to decide what kind of cheese to put on top still when I put it in the oven, so there wasn't any. After it baked for a while, I poured some of the sauce that collected around the side of the lasagna over the top; it had started to thicken, so it stayed there a bit better than at first. As I mentioned, I needed to add some water around the sides to help the noodles cook; next time I make a sauce like that I'll remember that might be necessary.
I thought it turned out ok. Mark seemed to like it, as he not only said he did, but he also ate more pieces of it than he usually does for the dinner when I first serve a lasagna. So, definitely a repeat.

I'd forgotten that I'd done a similar lasagna before, but Monica remembered me sharing about it elsewhere. I did, and here's a summary of the differences:
Sauce:
This lasagna's sauce was a peanut sauce with a little cilantro. The other one was a cilantro sauce with a little peanut; it also had more rice vinegar, and coconut milk and crushed red pepper.
Cheese:
The cheese layers for this one were made from cottage cheese and egg. The other one used ricotta. Both had lemongrass and galangal.
Veggies:
The veggies for this one were broccoli, carrots, and pea pods. The other one had a bag of frozen three pepper and onion blend.
Top:
This one had no cheese on top. The other had a gouda we needed to find a use for.
Now that I remember making that other one, I remember it being good. It was definitely different from this one, even though it was similar thoughts that brought both about. I'm amused that the lemongrass and galangal in the cheese layer seems to be a constant for me.

Another food post
I made another lasagna a few weeks after the last one I posted about. For that one, I went a little more "normal" with it -- a tomato sauce with ricotta and mozzarella (or maybe an "Italian" blend of cheese) on top. Veggies were peppers and onions. Still vegetarian. (It's been years since I've cooked meat. Eat it on occasion still, but haven't cooked any in quite a while.)
Being me, I couldn't just have everything be straight from the container. For the sauce, I used our usual tomato-sauce base -- we never use it straight from the jar as-is -- for a vodka sauce. When I've previously made a vodka sauce, it's been a "cream" sauce ("cream" is in quote b/c I use fat-free dairy instead), but this time I didn't add any dairy to the sauce. (We never drink vodka -- preferring drinks made with rum, and not really drinking much of those to begin with -- but we have gone through one bottle and most of a second since I first made a vodka cream sauce.)
It was apparently a hit. Mark said it was probably the best lasagna I've made to date.

Lasagna the second
Last Sunday I followed up on that plan to do a lasagna (or enchilada torte, as it's the same thing really, just with corn tortillas instead of lasagna noodles) a month with the pumpkin lasagna I was thinking of.
"meat" layer -- dry black beans, soaked and cooked with a little seasoning
veggie layers -- the white part of a bunch of green onions, one large white onion, and a few cloves of garlic, all chopped and sauteed; a red bell pepper, an orange one, and a green one, all chopped and mixed together in a bowl
cheese layer -- a container of fat-free cottage cheese with the green part of the green onions chopped and mixed-in
sauce -- a pumpkin sauce with some freshly chopped sage, a little rosemary, baking spices (cinnamon, nutmeg, cloves, mace), rum, pumpkin, fat-free evaporated milk, and a little walnut oil
Only two of the three layers of lasagna had the onion blend, and only two had black beans (because I forgot about them until I'd already done the second layer other than that. I sprinkled some shredded "sharp" cheddar ("sharp" is in quotes, as the yellow shredded stuff is never what I consider sharp, being spoiled by the 4-yr Black Diamond on occasion) over the top, and baked as usual.
It turned out well, especially considering it was an experiment. The cheddar was a good choice, but I think I might add some (or some other sharp or sharp-ish cheese) to the middle layers if/when I do this sort of thing again. The main part of the lasagna was pleasant enough, but was a little soft in its flavors. Anyway, it was liked, and judged a success.

It's been a while since I've posted here. It does make me feel a bit better that similar can be said for the people I know personally whose blogs I follow; I wouldn't follow any of them if it required actually going to their blogs to see if they'd updated, since they do as rarely as I have.
Anyway, I've decided to post here a little more regularly. I probably won't often, especially with Facebook for short updates and so on, but even once a month will be more than I have been.
I decided recently that I want to make a lasagna (or lasagna-style dish, like an enchilada torte, which is a lasagna with corn tortillas instead of lasagna noodles -- down to the same baking directions) at least once a month -- probably every four weeks or so. I wanted to do something like this before, but tried to do so more frequently than that, and it didn't last long. So this time I'm trying to be more realistic.
The inspiration for this is in part that Mark bakes bread pretty much every weekend (and bagels almost every Sunday, and cookies for when either of us has to take cookies to our lab meeting groups, or just because it's been a while since we've had cookies at home). I wanted something that I just throw together that seems all special and fancy, too. I also thought it would be nice to be able to throw together a lasagna on a whim, based on what we have or what sounds good.
Two weeks ago, I started this once a month thing with an enchilada torte with a tomatillo-cilantro sauce. I made the sauce from some fresh tomatillos, a bunch of fresh cilantro, a can of green chiles, and the white part of a bunch of green onions. The green part was mixed into a small container of cottage cheese for the middle layer. I sauteed a bag of frozen pepper and onion blend, and mixed in a box of neufchatel (inspired by a chicken enchilada recipe I've made before, though this torte was vegetarian). I did two layers of the pepper and onion blend, and one of the cottage cheese blend between layers of corn tortillas and the sauce, and sprinkled a Mexican blend of shredded cheese on top. Bake at 350 for somewhere in the neighborhood of half an hour, and yum.
I still have two weeks to figure out what the next one will be. Maybe it'll be a fall harvest lasagna with a pumpkin sauce. It's been a few weeks since we did something like that (not the lasagna, but the pumpkin). I don't know how many cans of pumpkin we've been through in the past few years, and we still have yet to make a pumpkin pie.

Mark and I both participated in the Hypertext 2009 conference that took place in Torino, Italy this year. (You might better know the town by the name Turin. However, after collaborating with people there, the name Torino is more familiar.) Since the cost of such a trip is mainly in getting there, in terms of both money and time, we chose to arrive a bit early and do a bit of personal travel before the conference. We chose to go to Florence for our personal travel there.
Most of the pictures in the slideshow are from Florence, starting our third full day there, due to some travel complications heading out there.
Our flight to Atlanta was delayed due to weather in Atlanta causing them to temporarily halt all flights. However, they were boarding our flight to Charles de Gaulle for an on time departure, meaning that by the time we got to the concourse, they were already announcing final boarding, saying that everyone should already be on board. We were not the only ones just getting there, and they did hold the flight back a bit to allow others with delayed flights a chance to catch the flight, as there aren't many of them in a day. Catching our final connection was a bit easier, but we got there just as they were finishing boarding there, too. We arrived in Florence to find out that our luggage had missed the connection back in Atlanta and had yet to cross the ocean, meaning it would be at least a day, minimum; we got it almost exactly 48 hours after arriving in Florence. And our new camera was in it, along with our clean clothes.
I don't really remember what all we saw in exactly what order in those first two days. The pictures give me clues to remind me after that, but for the first days, I can't guarantee the order, so instead I'll just mention what places I remember we did see.

Internet-less for the weekend
A little over a week ago we had a bit of a spring/early-summer storm during the day. I was home for this. It had seemed to be quieting down a bit, as far as I could tell, and then there was one bolt of lighning.
The front window flashed bright white through the curtains. (Remember, this is the middle of the day. It was grey and cloudy, but the sun was obviously on the other side of the clouds. So that was very bright to flash the window that bright.) The thunderclap was practically instantaneous. And it was definitely loud. The combination even freaked out our youngest cat, who seems to have absolutely no sense of fear at any other standard times.
I unplugged my laptop, just in case, and tried to check on the weather. I'd been online when this happened, so I knew everything had been working, but it wasn't anymore. We occasionally lose internet briefly when there's a storm, so we didn't worry about it right away.
However, it was different this time. It hadn't come back later, and we figured out that both the cable modem and wireless router (the thing that lets us hook up multiple computers, including the laptops and the Wii, to the one modem) were fried. Mark ordered replacements before heading out of town for the weekend, but for about a week we had no internet access at home. (And even then, we only got fully back online when we did because we just happened to have a couple network cards to replace the ones in the computers that were connected physically to the router, including the desktop machine I use for our online banking, bill-paying, etc. after they turned out to also be a little toasted.)
This used to be the way of things, but I've gotten so used to having that access. I'm used to checking the news, or my email, or the weather while sitting on the couch in the living room. We streamed debates and speeches over the wireless onto a laptop feeding into the TV (it's not hooked up to cable) during last year's campaigns. I'm writing this while stretched out on the couch.
Not having that for most of a week drove me nuts. It's one thing to leave it intentionally, for a break from things. But to have it taken away by surprise like that? I don't like that.

More adventure at the house of cats
This time, none of the cats are involved in the adventures about to be described. Though I would like to mention that our youngest, the one who found the possum, was very cute watching DNC speeches with us; he seemed to particularly like Michelle Obama.
Anyway, I was going to post about our adventures replacing the shed door a couple weeks ago. A previous owner had used an interior door, and it scraped on the concrete floor enough so that the door wouldn't really open and it was quite damaged. Also, the door knob and lock didn't really work, as they were loose and falling out.
But, since we replaced the door with an exterior door like it should have had in the first place, we've had a bit more excitement. Monday night, the night before Mark started teaching his first class and I had a meeting regarding my research assistantship and all the work I'll be doing for that, the power went out for part of our neighborhood.
We heard it before it happened, and therefore both knew what was about to happen. See, the transformer is in the back corner of our yard, so when we have a power outage, depending on how/why it goes out we might hear it, and this was one of those times.
It turned out that a neighbor's tree had fallen on the transformer, which the power company figured out a little before midnight, meaning it was going to take longer than they'd originally estimated to bring power back to the neighborhood. It also meant that they had to bring chainsaws to cut down the tree (and apparently some that it took with it) to get the transformer free and do the necessary work -- which means that we were woken up at 1 or 2 or so by the sound of chainsaws in our back yard. And muttering. Somehow I missed the part where one of them audibly said something along the lines of "It's going to look like a tornado went through here." (Mark heard that one, and it didn't help him get back to sleep any easier.)
We got power back sometime in the early morning while I was asleep, and woke up in time to get me to my meeting. (Mark's class is in the afternoon on Tuesdays and Thursdays, so there was no problem there, and his full-time job is pretty flexible on the hours as long as he's there for meetings and puts in the time.)

Possum in the house
A while back, Mark heard one of the cats growling at something, but it didn't sound quite right. He found Banshee by the TV stand, staring underneath and, he thought, growling at something. However, it didn't sound like Banshee. Suddenly he realized that the growling was coming from underneath the TV stand.
Mark had been working in the garage with the side door open earlier. The possum must have gone into the garage then when he wasn't looking, and come into the house with him without him noticing. (The cats sometimes manage going through that door without us noticing, so it's certainly possible.) Then, after Mark had gone upstairs, Banshee cornered the possum. We're glad it ran under a piece of furniture that the cats are too big to go under, as someone would certainly have gotten hurt otherwise.
We locked the cats away, two in the laundry room downstairs and two in an upstairs bathroom, and Mark used an old outdoor broom to coax the possum out from its hiding place. I managed to get one picture of it before my camera batteries died (shown below) while he was trying to chase it toward the back door. He got it a bit farther before it just hunkered in a corner.
Finally, we got a big cardboard box, coaxed it in, and carried the box outside, letting it leave in its own time. While Mark went to find a suitable box, I kept an eye on the critter to make sure it didn't go anywhere, and had some fun at its expense, holding the broom above it and watching it move its head around, mouth wide open (looking ridiculous), waiting for a chance to bite the broom.
We got it out with nothing more than some potential emotional scars for the possum. Everyone who was supposed to be in the house was completely unharmed, and the possum got back outside to relative safety. Banshee probably didn't really think much of it even when it was happening.

Calls asking about flooding... after ours is done
Saturday after my last post, we got two calls from parents -- one from each set -- asking about how we were doing with flooding. This amused me because our flooding happened on Wednesday. Since then, the state has apparently had the worst flooding in 100 years or something.
We wouldn't have noticed ourselves, as none of the areas we went to over the weekend were directly affected. If it hadn't been for the calls from parents, we would only have noticed due to headlines later and because some friends of ours had their weekend plans altered due to the flooding; one friend was supposed to fly somewhere on Saturday, but was unable to reach Indy to get to the airport.
Basically, Bloomington itself wasn't hit too hard by that flooding. We mostly couldn't get anywhere. Depending on timing, the vehicle being driven, and the person behind the wheel, Bloomington was either an island or a peninsula. People couldn't get from Martinsville to Bloomington, and Mark has walked to Martinsville from our house. (Okay, so he's a little crazy, but still...)

Rain, rain, go away
Yesterday was an interesting one weather-wise. I'd gone to a friend's house to spend some time with her, she working on some sewing she's doing for someone, and me working on some of my computer stuff. We went out to grab lunch and got back a little after 2; the weather wasn't so bad then. But then it started raining. And I mean it was pouring. We've had over 3 inches of rain since the beginning of June (isn't it still the beginning of June?), and most of it was yesterday afternoon. I waited at the house for a while before going to pick up Mark from work due to what we'd heard about road conditions in town.

We've had this blog set up for some time, and had not yet actually used it. We've had pictures from our trip to Japan for even longer, and have not yet shared most of them. So, when I recently rediscovered at least one place where we had those pictures stored, I decided to finally make use of the accounts I'd set up to share such things.
